I recently drew up this plan for the tiny topsail schooner Julia.    It was a  real ship that I had researched.   I did not draw it specifically for ship bottlers, but it ocurred to me that it may be suitable for beginners as it is fairly simple, and steered by a tiller rather than a wheel.

Interesting image of the Julia - nice looking ship.  Given the set of the square top sails and the filling of the remainder of the suit it appears that the wind is from the port quarter.  However, the flags are streaming in a manner that indicates she's running into the wind - a head wind

I think the wind is meant to be blowing into the port bow (which is why the square yards are braced to starboard) and filling all the sails, and making the flags bow aft, maybe at a bit of an angle to starboard!      Sailing on a tack into the wind.
