The sail and rigging are pretty easy.  They aren't as complicated as most ships.  I've never done oars.  I've seen a couple methods used.   One involving putting all the oars on a line and folding them in similar to the mast then unfolding once they're in.  

The other method is put the oars in one by one.  More tedious but simpler.   

The other thing to consider is the raised bow and stern.  Very often these rise up higher then the bottle neck.  By making them detachable you can fit the hull in then attach the pieces making the hull larger than the bottle neck which makes for a real magical ship in bottle.
